I’ve been making these White Chocolate and Coconut Strawberries for a long time. It is a simple and healthy dessert by itself but also a pretty complement for a birthday cake. It is festive enough to feature in your Christmas table and add a touch of freshness to the overpowering richness of the Holidays desserts. It is also a great option for your Easter dinner.

The original recipe is here. You can mix Strawberries covered with dark or milk chocolate and some covered with white chocolate, as it is in the original recipe, from chef Michael Smith.

For this recipe, be sure to use good quality white chocolate, it does make a difference.

This recipe only makes 12 large strawberries, plan accordingly.

I normally double the recipe to have 24 beautiful White Chocolate and Coconut Strawberries. The easiest way to dip the strawberries is using a set of dipping tools, which I didn’t have at the time I took these pictures. It does make it easy dipping the strawberries in chocolate with the tools, especially if you’re making a larger batch.

White Chocolate and Coconut Strawberries

12 large ripe strawberries, washed and dried

12 oz white chocolate sheredded

shredded unsweetened coconut

Melt 3/4 of the white chocolate in a bowl set over a small pot of simmering water. Be very careful to not drop any water inside the chocolate bowl. Let the chocolate melt slowly.

Take the bowl out of the heat and mix the remaining white chocolate to temper and lower the temperature, which will help your chocolate to look professional with that silky texture. Watch a video on how to temper chocolate properly here. It is easier than what you think, if it is your first time.

Dip every strawberry into the melted chocolate. Immediately roll in coconut. Lay the strawberries on a parchment-lined baking sheet while the chocolate hardens.
