This healthy Avocado dessert can be also be part of your Keto Diet, you just have to adjust the amount of sugar in the recipe to your daily intake of carbs for the Keto diet.

We all know how healthy avocados are:

  • packed with more potassium than bananas
  • loaded with healthy fatty acids
  • full of fibre
  • brimming with antioxidants
  • delicious and naturally creamy

I made it as a diabetes friendly version using no sugar added ice cream, but you can play with the amounts of ice cream and sugar accordingly, for a sweeter and thicker version. It is really to die for!

2 Ingredient Avocado Dessert

(4 portions)

2 ripe Haas avocados (check if they are a bit soft, the skin turns darker, but should not be black)

1 1/2 to 2 cup vanilla ice cream

Cut the avocados in half and remove the seeds. Take all the avocado flesh and mix with the ice cream in a food processor until all mixed. Pour into an ice cream container and freeze it for a few hours. Serve as ice cream, scooping the portions, garnishing with fresh mint. It is a great option to have this 2 Ingredient Avocado dessert prepared ahead of time and frozen for a more elaborated dinner.

Avocado Dessert Cream – 3 ingredient

(4 portions)

2 ripe Haas avocados (check if they are a bit soft, the skin turns darker, but should not be black)

1 1/2 to 2 cup vanilla ice cream

1 cup milk (or coconut milk)

Cut the avocados in half and remove the seeds. Take all the avocado flesh and mix with the ice cream and milk in a blender. Serve immediately. You can adjust the amount of milk to make it creamier and add some sugar if you have a sweet tooth. I personally like the creamy version, perfect for a dessert after a heavy meal.
