Coconut Creamy Popsicles

From all the popsicles recipes out there this is my ever favourite for the warm days. Nothing like frozen treats  in the hot and lazy summer days.

Of course is always easier to buy cheap popsicles, which can be fun and yummy, but taking the time to make your own summer popsicles is priceless. You’re adding healthy and nutritious ingredients that will elevate your homemade popsicles to another level.

Your family will love these creamy, yummy, coconut popsicles that are super easy to make.

I start making these tasty creamy coconut popsicles at the first hint of spring, I’ve been making it for years and keep it in the freezer for the whole summer.

The first version of these coconut popsicles is a lighter version, if you want to cut down the calories. The second version is a more indulgent recipe.

It is difficult to resist to a frozen coconut treat

I really can’t resist to a frozen coconut treat, it has been imprinted in my memory from  many holidays that my family would take in the summer when I was a kid.

We used to go to this “gelateria” in Ubatuba, Sao Paulo, Brazil, that had these amazing creamy coconut bars, packed with shredded coconut.

Creamy Coconut Popsicles

  • 1/2 can evaporated milk
  • 1/2 can 5% cream (I used the same can of the evaporated milk as a measure)
  • 1 can coconut milk (use the low fat version if you are trying to cut down calories)
  • 1/4 cup Splenda or 1/2 cup sugar
  • 2 tsp coconut extract
  • 1/2 cup of shredded unsweetened coconut

Blend all ingredients, make sure the coconut milk is well incorporated, pour into the  popsicles molds and freeze.

Creamy Coconut Popsicles (Indulgent Version)

  • 1(13 ounce) can coconut milk 
  • 1(14 ounce) can sweetened condensed milk 
  • 2/3 cup 10% cream
  • 1/4 tsp sal 
  • 1/4 tsp vanilla
  • 2 tbs coconut extract
  • 3/4 cup unsweetened shredded coconut 

Blend all ingredients, make sure the coconut milk is well incorporated, pour into the popsicles molds and freeze.
